For the OTAs you have, the AP Dove 15 dovetail and the AP 15" sliding bar (SB1500) would work pretty well. The extra length of the 15" bar gives you lots of room for adjustment once you add imaging

I also have A-P1100GTO and I use Stellarium along with Stellarium Scope and they work perfectly with A-P V2 ASCOM driver and A-P1100GTO without keypad. I also use PHD2 along with Sequence Generator

You don't need to do a 3 star alignment - no need for it because this is an Equatorial mount (not Alt-Azimuth which requires 3 star align). Just polar align normally as you would any equatorial mount.
