When using PHD2 for guiding, it lets me pick the USB camera that I want to use for guiding.  As long as the two guide cameras are different makes and models, I suspect that I can simply pick whichever camera I want to use for any particular session.

PHD2 allows you to choose the guide camera to connect to, even if they are of the same make/model. PHD2 User Manual: Equipment Connection, scroll down to "Multiple Cameras of the Same Type".
